We did a small garden this year, and I had a ton of tomatoes! I don’t eat tomatoes– I have never liked them, but I DO love homemade salsa. I have made countless batches this summer! But what was I going to do with the next round of tomatoes that were ready?
Tomato sauce.
I use tomato sauce for chili, goulash, and countless other recipes. Brandon and I did a trial run the other night with my food processor, and were surprised at how well it turned out! I decided I better get to it so I could have some sauce in the freezer this winter!
- First, wash and core out the tomatoes, and remove any bad spots. I did not peel them, but you could if you wanted to.
- Cut tomatoes into quarters, and put in the bowl part of your food processor.
- When the bowl is full, put the lid on and turn it on. Let it blend for 2 or 3 minutes, let it rest, then blend again for another 2-3 minutes.
- Pour into freezer safe containers–voila!
Easy, right? There will be a few seeds but if you blend it long enough, they aren’t too noticeable. Now I can enjoy fresh, garden tomatoes in my chili through fall– and most importantly– football season!
